Vegan Chocolate Chip Cheesecake for Shavuot




Most of us look forward to eating lots of dairy delights on Shavuot. Foods like cheesecake, ice cream sundaes, and noodle kugels are commonly served.
Folks who can’t eat dairy due to an intolerance or preference often feel left out of the celebration. This recipe for Vegan Chocolate Chip Cheesecake is perfect for them!
Easy to make, with wholesome ingredients, it is sure to be a party pleaser.


1 1/2 cups pitted dates
2 1/2 cups chopped walnuts
2 8oz containers Tofutti cream cheese
1 cup vegan chocolate chips (I use Enjoy Life brand)
Juice of 1 lemon
1/8 Tsp. salt
1/2 cup white sugar
1/2 tsp vanilla extract


Pre-heat oven to 350 degrees.
Pulse dates and walnuts in a food processor, then press into 9-inch pie plate. Mix Tofutti, lemon juice, salt, vanilla, and sugar in a large bowl. Blend well and fold in chocolate chips. Spoon into prepared crust.

Bake for 30 minutes, then chill in the fridge for at least one hour.
